O's Corner: Quick & Easy Dips & Spreads

Eliminate the stress of unexpected guests or planning a social evening by stocking some basic items that create easy but delicious appetizers.
  1. Keep a jar of roasted red peppers and some mozzarella cheese (whole not sliced or shredded) on hand. Dice or cut into chunks the red peppers and an equal amount of mozzarella, then mix the two to create a paste. Serve on your choice of crackers.
  2. Stock bread sticks of your choice to serve with a hummus or tapenade.
  3. For an interesting and tasty change from the usual dip and chips add a can of smoked oysters or chopped clams (drain them first) to onion or ranch dip. Or add baby shrimp (canned or frozen) to cheese dip.
With a little planning, prep time and at minimal expense, you can enjoy time with your guests while munching on some finger-licking good food.
